Pasta Fagioli (Pasta and Beans (From Angela and her Mom)
1/2 Kilo White Beans (1 pound)
8-12 small cherry tomatoes (must be flavorful!)
5-6 garlic cloves, whole
1 1/4 Cup Celery
3/4Cup small drinking glass oil
1-4 VERY meaty ribs 1 slice ham skin with a little meat on it
Pasta-the small kind for pasta fagioli. If none available, use broken up pieces-better
anyway!
1. Cook the beans for about a half an hour
2. Throw everything but the pasta and oil in the pot and bring to boil.
3. Once boiling, add most or all of the oil.
4. After 30-45 minutes (or until the meat is falling off the bones) add 2 small handfulls of the pasta or broken up pieces.
5. Season with salt and pepper to taste.
